Is ASUS RT-AXE7800 a better deal because it has newer technology? On Amazon it's just $30 more.

It really depends what the devices you will be connecting to the router support. The AX86U-Pro looks better for older devices (802.11n and 802.11ac) while the AXE7800 looks better for the newest devices that support 802.11ax.
If you're using a bunch of Echo Dots and have 802.11ac in your gaming PC (which is also what the PS5 and Xbox has), the AX86U Pro is probably the better buy.

On specs, RT-AXE7800 seems to support more latest technologies, but RT-AX86U Pro does have a faster processor and more RAM.

Are you sure? The Amazon RT-AZ86U page doesn't even mention merlin while RT_AXE7800 has a few places mentioning merlin. //@Anonymous: The most important thing is that AX86U PRO supports Merlin
