Technology always advance at steady speed because of competition. With trade war and covid, sellers no longer competing. They can still jack up the price on ancient monitors instead of slashing prices. While they can make good money on these junks, there is no need to create new products. For reference, I have an 2018 MBP, macOS takes 12GB and applications takes 65GB. So if you are not using the laptop for storage purpose, 256G is likely enough.
