In the Midwest it is not impossible to find pork fat for $1/lb from farmer willing to deliver for a nominal fee. I then render it on the stove, eat and cook with the cracklings and the remainder is tasty pork lard to cook with for a long time. In the cold season it preserves well in the larder, no need for refrigeration. Mexican grocery stores also sell it but not as cheap. Avoid the hydrogenated version, as you should avoid any hydrogenated fats, they are bad for you.
