On specs, RT-AXE7800 seems to support more latest technologies, but RT-AX86U Pro does have a faster processor and more RAM.

It really depends what the devices you will be connecting to the router support. The AX86U-Pro looks better for older devices (802.11n and 802.11ac) while the AXE7800 looks better for the newest devices that support 802.11ax.
If you're using a bunch of Echo Dots and have 802.11ac in your gaming PC (which is also what the PS5 and Xbox has), the AX86U Pro is probably the better buy.
