Could you use it to cut rubs short? If not, any recommendations of simpler electrical knifes for that purpose, instead of the usual bulky bone cutting machines?

I'm using this kind of tool for cutting homemade bread. It will make clean-cut for bread. Normal bread knife can't cut clean as this type of tool.
