I think the maximum hardness of the x50crmov15 German steel is 56 HRC. //@anonymous: German steel normally has 55-58 HRC and good Japanese steel like VG10 has 60+ HRC and SG2 steel is even better. But Japanese AUS8 is just so so. The quality is also depended on heat treatment. Only made in Japan with Japanese steel means nothing. //@anonymous: I have multiple chef knifes and I found that Japanese steel is lighter and softer. I have Japanese brand (made in Japan with Japan steel), Zwilling (made in German with German steel) and J.A. Shun Elite uses sg2 Japanese steel vs Zwilling uses X50CrMoV15 German steel //@anonymous: Regular zwilling quality is so so. Miyabi line is better, or high end shun.

Lighter... I guess there are stamped knives.
